At the end of June, we completed bottling the last of the 2016 harvest wines. All destined for sparkling wine – we have a Classic cuvee, Rose , Blanc de Blanc (all from the classic champagne varieties) and a sparkling Seyval blanc. These will now be in bottle for the second fermentation for 2-4 years.
The next operation in the winery will be dosage trials of the Classic Cuvee 2014, Seyval Blanc 2015 and the Rose 2015. The ones that show the correct balance of autolysis (the reactions that take place when the wine spends time in contact with the lees), fruit, structure and aromas shall be disgorged at the end of September, ready for release in November this year.
